Introduction

For more than 30 years I have tried numerous hotels, restaurants and hawker food. Before I bought a car, I can cycled all the way from east to west just to try out new food before cycling back.

I seen many recommendations from television shows, YouTube etc ......... and some were even awarded with Michelin award, but their food are not nice as what was described. Back in my younger days, I used to try most of the television and articles recommended foods. But after I knew the reason why they were on shows/recommendation even though their foods aren't nice, I don't do that anymore. Today I still watch and visit provided I am nearby and more importantly their texture, aroma ... must be able to convince me in order for me to place an order and to try out. In fact we can telll from the looks, smell ...... whether the food is nice or not.

Amongst the places that I tried, I can strongly say this - the best, cheap and delicious foods come from hawkers. Even like bakery, example muffins, cupcakes ........ we are able to get a good one from the hawkers.

One things sad about hawkers is the food standard may drop after years. It can be due to the chef getting old, no handover or the handover person was not able to cook as delicious as what the owner did. That's why recently our government proposed with an idea of handover to an outsider who are interested. It may not be so easy and straight forward, however it could be a good start up. Knowing the ingredients and tactics is one thing, the other most important for a chef to come out / cook a good dish is passion and attentive.
